1 1/2 cups local honey
Coconut oil (or any cooking spray)
Chile flakes (optional)
Line a baking sheet with parchment paper and coat lightly in oil or cooking spray.
Place honey in a saucepan, cook on medium-low uncovered until honey starts to boil. Heat honey until it reaches 280 degrees, preferably using a candy thermometer (takes about 10 minutes). Quickly pour honey onto prepared ban and spread evenly. Let honey cool for about 20 minutes.
Lightly oil hands or wear latex gloves coated in oil. Fold the honey over itself making a ball. Stretch honey into long strands and fold back onto itself repeatedly, until it changes into a lighter, tan color (about 5 minutes of folding). Chill 10 minutes.
Coat a knife with oil or cooking spray and cut taffy into 4 equal pieces. Roll each piece into a log about a foot long. Cut each log into smaller pieces and sprinkle with flavoring of your choice.
Wrap each taffy in a piece of confectionary paper or wax paper and enjoy!
